Eat: ELE Entertaining – Smoked Salmon, Cream Cheese and Pomegranate Blinis & Watermelon Fizz Cocktails

There is nothing better than ending the week with a pretty cocktail and some decadent canapés. These blinis are so delicious and a perfect match for our Watermelon Fizz Cocktails.

Blinis (makes 12)

12 blinis (good quality store-brought)

509g smoked salmon, sliced

100g cream cheese

1 lemon, cut in to mini wedges

Handful of dill

Pomegranate seeds

To make lightly toast blinis and top with a smear of cream cheese, slice of smoked salmon, dill fronds and a mini lemon wedge. Top with pomegranate seeds and serve.

Watermelon Fizz Cocktails

Tequila

Fresh Watermelon Juice

Agave nectar

Sugar

Soda Water

Sugar rim high ball glasses by coating the top of the glass with water and dipping in to a plate of sugar. Add a shot of tequila and a dash of agave nectar. Top with 1/2 watermelon juice and 1/2 soda water. Stir slightly and serve. The measurement are just guides, if you prefer your cocktail slightly sweeter or drier reduce or increase the amount of watermelon juice. Garnish with fresh strawberries. Enjoy!
